Salted Peanut Bars

These tasty, chewy, peanutty bars are well-liked by many.  When asked to make snacks for concessions at school, these bars are a sure way to get some rave reviews!

Crust Top Layer
1 pkg. Yellow Cake Mix 2/3 c. corn syrup
1/3 c. butter, softened 1/4 c. butter
1 egg 2 tsp. vanilla
3 c. mini marshmallows 1 (10 oz.) pkg. peanut butter chips
  2 c. crispy rice cereal
2 c. dry roasted, salted peanuts

Heat oven to 350 degrees.  In bowl, combine cake mix, 1/3 c. butter and egg.  Beat at low speed until crumbly.  Press in bottom of ungreased 9x13 cake pan

Bake at 350 degrees for 12-18 minutes or until light brown.  Remove from oven and immediately sprinkle with marshmallows.  Return to oven; bake an additional 1 to 2 minutes or just until marshmallows begin to puff.  Take out of oven and cool while preparing top layer.

In a large saucepan, combine corn syrup, 1/4 c. butter, vanilla and peanut butter chips.  Heat until chips are melted and mixture is smooth, stirring continuously.  Remove from heat.  Stir in cereal and peanuts.  Immediately spoon warm topping over marshmallows.  Refrigerate until firm (about an hour).  Cut into bars.
